Essie Wedding Collection 2012 is my new favourite! I ‘m so into all of 4 colors, especially “Love and acceptance” (that creamy lilac on the right) and “Instant hot” (that white rose with a kinda stardust). I could wear them all the time!

I make linzer cookies for Christmas however I think today is a good day to share my favourite recipe (combined from different recipes I found online ;-) ).

Here’s what I put in:

225 gr butter

100 gr almonds blanched and grounded + 40 gr granulated sugar

95 gr granulated sugar

270 gr all purpose flour

2 egg yolks

few grated cinnamon

lemon zest

2 vanillas

confectioners sugar

Jam (I like raspberry and blueberry jam from IKEA and I also make some apricot jam cookies on demand (for my besties))

How I make it:

I place the almonds in the oven for 5’-9’. Then I process with the sugar until they are fully grated (like powder).

Then it’s classic. I beat the butter and the sugar until they’re fully combined and fluffy. I add the egg yolks, the vanillas and the lemon zest. Then I beat in the almond-sugar mixture. In the end I add the cinnamon and the flour. I divide the dough in 2 pieces and then put in the fridge for 1 hour or so.

Now it’s the cool part. I roll one piece of dough until is thin enough to be a part of cookie sandwich. I use a tall thin glass as a cutter so I get round pieces. Then I use my smaller cutters (heart and star shaped. I bought them from Salzburger Christmas market, yay!) to cut out the centers of the half of the round cookie dough pieces. I bake the cookies in preheat oven at 180 C degrees for 12’-15’.

When the cookies are cool (a) I dust the cut-out pieces with the confecioners sugar and (b) I put some jam on the plain round pieces. I take those 2 pieces and I make a sandwich.

This photo isn’t mine (a friend sent it to me who probably found it online) but I use it to show you how my linzer cookies look like, actually: Heart shaped with raspberry jam and star shaped with apricot jam. I’ll post a photo of my own Linzer cookies as soon as I bake them.
